On-the-Go Breakfast Ideas - Fits In a Cup
If your morning rush leaves no time for breakfast, make it the night before as part of your evening routine. As an added bonus, these breakfasts will conveniently fit in your car’s cupholder—just grab and go!
1. Egg Scramble.
Crack two to three large eggs into a 16-ounce microwave-safe to-go cup. Whisk with a fork, then add chopped deli ham, your cooked veggie of choice (chopped green peppers, diced tomatoes, chopped broccoli, spinach leaves), and shredded cheese. Refrigerate overnight. The next morning, microwave one minute, stir, then microwave another minute or until the egg is cooked through.
2. Apple Crisp Oatmeal.
Place 1/2 cup of quick (instant) oats into a 16-ounce microwave-safe to-go cup. Stir in a 1/4 cup of chopped apples, a dash of cinnamon, and a tablespoon of chopped walnuts. Add a cup of water or milk and microwave for one to two minutes. Stir and top with a dollop of whipped cream and a sprinkle of granola and/or dried cranberries.
3. Chocolate, PB & Banana Parfait.
Put a few sliced bananas at the bottom of a paper or insulated cup. Top with half a container of chocolate-flavored Greek yogurt and half a broken-up peanut butter granola bar. Repeat these layers one more time, ending with granola. Cover and refrigerate overnight. In the morning, take it on the go!
4. Power Coffee.
Pour 1/2 cup of cold brew coffee concentrate into a jar with a lid. Add one scoop of vanilla protein powder, a drop of vanilla extract, and 1/2 cup of vanilla almond milk. Cover the jar and shake until combined. Pour into a 16-ounce paper to-go cup and refrigerate. In the morning, add enough ice to fill the cup and you’re good to go.
5. Cinnamon Roll Overnight Oats.
Put 1/2 cup of whole oats in an insulated microwave-safe cup. Stir in a dash of cinnamon and two teaspoons of brown sugar. Add a dollop of whipped cream cheese, then top with 1/2 cup of vanilla almond milk, cover, and put in the fridge. In the morning, stir it up and enjoy. you can also warm it up in the microwave for 30 seconds.
