Ham Hash and Stuffing Recipe



Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 20 minutes

Serves: 4

Ingredients:

2 tbsp olive oil

4 cups chopped mixed leftover vegetables (such as carrots, Brussels sprouts, corn, roasted root vegetables and/or greens)

1 1/2 cups chopped leftover ham

1 cup crumbled leftover stuffing

4 eggs, fried sunny-side up

Instructions:  

  1. Heat oil in large skillet set over medium heat; cook vegetables and ham for 5 to 8 minutes or until mixture starts to brown.
  2. Stir in stuffing; cook for 3 to 5 more minutes or until heated through. Divide among 4 plates and top each with fried egg.

Tip: Substitute turkey for ham if desired. Alternatively, top with a fried egg that’s cooked as desired.
