Sriracha Queso Dip Recipe

INGREDIENTS
1 tablespoon olive oil
1 medium red sweet pepper, seeded and chopped (1 cup)
1 medium onion, chopped (1 cup)
2 cloves garlic, minced
16 ounces processed cheese product, cut into 1-inch cubes
1/2 cup whole milk
1/4 cup sriracha sauce
2 green onions, thinly sliced
Broccoli florets, cauliflower florets, and/or corn chips

Step 1
In a large saucepan, heat oil over medium-high heat. Add the red pepper and onion; cook, stirring frequently, 4 to 5 minutes or until pepper is tender and onion is translucent. Add garlic and cook 1 minute more.
Step 2
Add cheese product and milk; reduce heat to low. Continue to cook, stirring frequently, until cheese begins to melt. Stir in sriracha sauce. Continue to cook and stir until cheese is melted and ingredients are well combined, about 5 minutes.
Step 3
Transfer queso to serving bowl; top with the green onions and an additional swirl of sriracha sauce, if desired. Serve with broccoli, cauliflower, and/or corn chips.
