Turkey Fried Rice Recipe

Serves: 4
Ingredients:
1/4 cup canola oil
2 cups diced mixed leftover vegetables (such as carrots, Brussels sprouts, corn and/or green beans)
1 cup chopped leftover turkey
2 cups cooked rice, cooled
1/4 cup prepared stir-fry sauce
2 green onions, thinly sliced
Instructions:
Heat oil in large skillet or wok set over high heat; cook vegetables and turkey for 2 to 3 minutes or until well coated. Stir in rice; stir-fry for 3 minutes.
Stir in stir-fry sauce and 1/4 cup water. Cook for 3 to 5 minutes or until liquid is absorbed and rice is heated through.
Sprinkle with green onions. Divide among 4 plates.
Tip: Substitute teriyaki sauce for stir-fry sauce if desired.
